I normally have the same side dishes over and over and over. I know what my kids will eat and I know what I like. So, the majority of our meals include salad or rice or frozen veggies (although I am usually the only one who eats the veggies!).
I get together once a week with my gal pal Julie to cook for one another. One week- she cooks for our families. The next week- I cook for everyone. This particular week, Julie took us out of normal salad and rice comfort zone and she made these beautiful, yummy tasting potatoes.
Aren't they almost too pretty to eat? Almost, but not quite.
Parmesan Steak Fries

Ingredients:
- 3 large egg whites
- coarse salt and fresh ground pepper
- 3 baking potatoes (8 to 10 ounces each)
- 1 1/4 cups grated Parmesan cheese
Directions:
- Preheat the oven to 425 degrees. In a wide, shallow bowl, whisk the egg whites with 1 teaspoon salt until frothy. Cut each potato into 6 long spears; add to the egg whites and turn to coat.
- One at a time, lift the spears out of the egg whites, shaking off excess; working over a plate, sprinkle with the Parmesan cheese until coated (do not shake off excess). Place on a parchment-lined baking sheet.
- Bake, without turning, until the potatoes are fork-tender and golden brown, about 30 minutes. Season with salt and pepper.
Review:
Very easy to make and an absolute delight for the palate. Given my history with non-glorious side dishes, it was a welcome respite to eat potatoes! Everyone, with the exception of my non-potato eating 3 year old son, LOVED the potatoes.
