A few weeks back when I was visiting my friend Christy and her family in Hill Country of Texas, Christy brought to my attention this most delicious, easy, light dessert recipe. We tried it out together, with our families, and promptly stuffed ourselves to oblivion. So much for a "light" dessert.
I believe this recipe came off of the box of graham crackers that we used but I can't remember if it was the Keebler brand or Nabisco. Regardless, this no name dessert is fresh and awesome and I have already made it several times in my house.
And it looks pretty too, perfect for when you are hosting friends and family!
Raspberry Delight
Ingredients:
- Box of graham crackers
- 8oz tub of fat free Cool Whip
- 1/3 Fat cream cheese, softened
- 1/4 cup Splenda
- small container of raspberries
Directions:
- In a medium sized mixing bowl, combine together the Cool Whip, cream cheese and Splenda. Blend hand mixer until smooth.
- Spread mixture over graham crackers and top with a raspberry.

I also saw a recipe that used lowfat ricotta cheese like this too but with sugar. I never thought about using Splenda. Thanks!
